Right now when I am looking outside I kind of feel like cheating on you since the photos really look like summer and warm weather and all I could hear for a day was rain outside my window. Tiny drops and heavy ones and the background constant sound the water from heaven makes all aroud me. But the summer months are ahead as I said I will for sure keep the closet free from coats and knits ... maybe not today but one doesn't want to catch a cold either?

I am trying to think positive and with this recipe you might want to join me in thinking of lazy evenings, friends around and a light meal to give plenty of room for a good conscience about what we ate  and lots of energy for a good dance later on. Leave away heavy make up that belongs to the past months, now we want to feel good about the sunshiny days ahead and feel healthy. This recipe again is very healthy and the easiest to make, no cooking no washing up, the best to prepare for guests in advance or keep in the fridge for everyone in the family to grab as a healthy snack any time of day. The best way to start a meal is with something fruity and fresh. Your stomach will say Thank You and you are prepared for an easy transition between no food and dinner. This is a way of helping your skin glow and you will feel much better if you make the most of all the fresh produce there is to buy now on the markets. Now is the time for great fruit and vegetables and the time for pre-packaged stuff is gone.

Edamame With Soup

This is Edamame, our favorite for snacks. Simple soybeans in a shell cooked and sprinkled with sea salt and grated horse radish. It is easily prepared and makes the best pre dinner munch.
I found my new favorite flower shop! I am so excited, it has been there for a while but I kind of never realized how awesome it is. I will have to show you pretty soon some pics and you will for sure fall in love it. It is so close to my home and they have the most beautiful flowers and make fabulous arrangements! You Need

1 melon, I use a cantaloupe or a honeydew melon
1 organic lime, grated peel and juice
½ tablespoon curry powder or paste
200ml | 2/3 cup sparkling water

When you read the recipe you could probably make that soup with out any help but here is what I did.
The lime must be washed and dried prior using, then you can first grate the green peel and the press the juices from it. We need the entire flesh from the melon so you can either cut the melon lengthwise or in half, scrape the seeds out and cut the remove the peel. If you have a ripe fruit then this is really easy, you could scrape the flesh out with a spoon, this way you don’t even need a knife. Put this in a blender, I used my brand new Kenwood kMix, add the lime juice and peel, curry, sparkling water and season to taste with salt. Done. Now transfer the soup to your fridge for at least 3 hours.

I decorated my glasses with tiny basil cress.
Very decorative can be a fresh slice of lemon, herbs or even a small stalk of celery. This way the whole thing stays vegan, without anyone missing flavor or you can add a piece of crisp Serrano ham. That would make my son truly happy.

Spring is making progress every day and, honestly, next to Summer, winter, and not to mention fall, it is my favorite time of year. Seems like I cannot make up my mind? True, I love all the seasons for their various foods, the feelings they bring and especially the different light.

For my food photography I prefer the days with lots of natural light and I think you can see right here, how well the green stands out - almost unreal. This is because the recipe is entirely raw, apart from the noodles themselves. But if you like, you could make zucchini noodles with a spiral cutter for a carb-free, gluten free, vegan dish that will satisfy your appetite and nourish your body with essential vitamins, minerals and enzymes.

You Need

1 organic zucchini
60 gr organic spinach, washed
1 avocado, peeled and pitted
1/2 cup pine nuts
salt, chili
1 tsp fermented garlic
2 tsp lemon juice
water
1/3 cup organic olive oil, NOAN

All of the above goes into a blender and the amount of water you add depends on the consistency of the sugo.  I used 1 cup maximum or less.  When I asked my friend Birgit if she wanted some of the sugo and sent her the photo she said I WANT IT PLEEEEASE ! It is so delicious ! So ask her please or try it yourself it is easy to make and a sure success. Pour the sugo over cooked and drained fresh pasta and serve, drizzled with olive oil and with some pine nuts on top.

Are you curious now? I was ! What on earth do they put into their cakes to make it tasty and be attractive to the Viennese who are really spoilt by their tradition. In the vicinity of established bakeries and pastry shops, chocolate havens and the famous Coffee Houses with their vitrines full of temptations that have centuries of history here! You must try it out, promise me, please!

I fell in love with the place immediately, I felt welcome right away, I felt great when I left because all I ate was yummy and healthy and good for me ! One must feel at home here when you see how this place is designed by Shanna herself a graphic designer and daughter of Gabriele. 

OK another reason why I just love Simply Raw Bakery: A mother – daughter enterprise ! Just like Sophie and I !!! Gabriela has completed her Raw Food Chef degree in California at the Matthew Kenney Academy. She combines her skills and techniques with the talent of her daughter Shanna in this unique place for healthy indulgence that taste terrific and makes you want to come back soon. I particularly love the slice of " break with onion lard" The bread is made of zucchini, nuts, seeds and spices a secret recipe created by them and the substitute for lard is purely vegan and outstanding in taste. The Pumpkin tart was spiced with kurkuma and curry and the base is made with chia and almonds and oriental spices! Then we had "Kaiserschmarrn with Röster", something very Austrian:

The Kaiserschmarrn must be translated with "Emporer's Nonsense", a Röster is made of plums, mostly in form of a compote. This version again was raw healthy, no sugar great taste and a very good combination with the plums. They make cupcakes and smoothies and my favorite of all time is the "Hello Dolly" bar made of nuts: Oh My! I always take it home when I am there! Then there is a heart warming Almond milk and a great large bowl of fresh Zucchini noodles. 

Open from 10 am to 6 pm from Tuesday to Saturday. You can have breakfast and lunch and everything in between.

If you like to try one of their "Lucky Truffles":

1/4 cup organic orange juice
1 cup dates, pitted
2 cups ground almonds
1 tsp cinnamon
1tsp vanilla
dash of salt
coconut flakes or ground nuts for rolling

They are done in 10 min and here is the trick:
Soak the dates at least for one hour in orange juice and mix in a strong blender together with all the ingredients into a paste like dough. I recommend a Vitamix of some kind. Most important is the power of the blender, some might not be up for the task. Form balls and roll them in either coconut or nuts. Refrigerate for at least 3 hours.

I was recently asked for fail-safe Christmas Eve menu, easy to prepare and less stressful for everyone. I have an answer, and I promise I will share this one with you soon!

      For now I am so excited to show you some recipes I made with my friend Claudia, who is a raw food chef and comes up with the most delicious recipes, that are simple and taste delicious.

You Need 

120 gr/ 1 cup  macadamia nuts raw
1 tbsp matcha tea powder
2 tbsp agave sirup
2 tbsp coconut butter melted at 42°C
A pinch of salt

All goes into the food processor and done!

Chocolate Glaze:

60gr/ 1/2 cup cocoa butter melted at 42°C
60gr/ 1/2 cup cocoa powder sifted
2 tbsp agave sirup
pinch of salt

Mix all well until smooth in consistency.

Mix in a food processor even more until very fine

Your food processor must be much better than mine, I had to transfer the mix to my PacoJet and then I was happy with the consistency!

The mix can be easily formed into small balls between your palms and then you first pierc them with a toothpick dip them in chocolate and place them with the help of a second toothpick onto a plate or even better on a parchment paper, so you can remove them easily after they dry.
