Wild Asparagus Salad

The happy mood is a little easier to maintain at the moment, because Sophie is home and with her comes always a happy vibe. The request this afternoon was for a quick salad to bridge the gap before dinner. I found this absolutely lovely Spanish olive oil by Castillo de Canena and the fancy turquoise bottle promised to be a summer favorite! I never had smoky olive oil before and I must honestly say WHY??? I didn't use as much oil as I would if I used plain olive oil and combined it with a tarty pink pomelo and wild asparagus and it was totally approved by every one. It looks amazing don't you think?
